Recipe of the Week!


Summertime is a great season to get fresh fruit to make smoothies with. Below is one of my favorite recipe's for a satisfying smoothing that won't leave you hungry in a hour.

Ingredients:
1 Packet of Myoplex Lite (strawberry or vanilla cream)
1 cup of blue berries (feel free to add any of your favorite fruit for more flavor)
Low-fat milk (amount depends on how thick or watery you like you smoothie)
1 big hand full of almonds
 
Mix all of the above ingredients in a blender and enjoy! 

*Make sure to purchase your favorite fruit at the local farmers market

Recipe of the Week!

Easy Enchiladas
*For variety, add lean ground beef, ground turkey, beans, tofu, or corn to the sauce

1 8oz can of enchilada sauce
1 4oz can of chopped chilies
1 8oz jar of salsa
2 cups fat-free sour cream
1 6oz bag of low-fat cheddar cheese, grated
1 8oz bag corn tortilla chips

1. In a saucepan, combine the enchilada sauce, chillies, salsa, fat-free sour cream, and 4 oz of grated cheese. Heat.
2. Spray a 13"X9" pan with cooking spray, and then line the pan with the tortilla chips. Pour on the enchilada sauce mixture. Sprinkle the top with the remaining 2 oz of grated cheese.
3. Bake uncovered at 350 degrees for 10-15 minutes, or until bubbly.
